Bean Stew with Prunes

Ingredients
For 2 persons

75 g white beans

750 ml vegetable broth

1 bay leaf

2 tsp. margarine

1 onion

several black peppercorns

100 g prunes

1.5 Tbsp. red wine vinegar

1 tsp. honey

1 pinch sea salt

1 clove of garlic

2 whole-grain rolls

60 g Emmental cheese


Preparation

Soak dried white beans for several hours, then cook in the vegetable broth with a bay leaf for approximately one hour. Meanwhile, heat the margarine and add chopped onions to sauté. Add the onion, black peppercorns, and prunes cut in strips to the beans. Cook for another 5-10 minutes and season to taste with red wine vinegar, honey, sea salt, and a crushed clove of garlic.

Cut the rolls in half, place Emmental cheese on the slices and bake for 5 minutes in the oven at 150°C.
