100 g durum wheat pasta
250 g pork tenderloin
1 onion
1 clove of garlic
40 g dried tomatoes
2 tsp. tomato paste
2/3 can of white beans (approx. 160 g)
a handful rocket
1 pinch of iodized salt
2 Tbsp. olive oil
Cook pasta in boiling salted water.
Cut pork cut into 2 cm thick slices. Dice onions and tomatoes, chop garlic. Rinse and drain beans. Wash and spin rocket to dry and tear into pieces as small as desired.
Heat the olive oil in a frying pan, season the meat with salt and pepper and sauté over high heat on both sides, then remove and fry the onions over medium heat until translucent. Add garlic to fry briefly. Add tomatoes and tomato paste and cook briefly. Deglaze with 300 ml pasta water and bring to the boil.
Add the meat and beans and heat up. Season sauce with salt and pepper.
Drain the pasta, stir in the sauce, sprinkle rocket on top and serve immediately.
Tip: Instead of pork, turkey breast cutlets or beef can be used. Adding a pinch of marjoram makes the sauce very aromatic.
Extra tip*
For higher energy needs, increase pasta serving by 25 g (raw weight). More tomato paste may then have to be added to the sauce.
