Vegan pumpkin bread

Ingredients
For 2 persons

250 g wheat or spelt flour

1 tsp baking powder

1 tsp. baking soda or 2 tsp. more baking powder

1/2 tsp salt

1 can pumpkin puree 452 g or homemade

80 ml vegetable oil

1 tbsp apple cider vinegar

1 tsp. vanilla extract

150 g cane sugar

150 ml vegetable milk

Toppings:

Pumpkin seeds

Pecans


Preparation

1. preheat the oven to 175 degrees and grease a loaf pan 25 cm. In addition, line with baking paper and leave an overhang on the edge.

2. mix flour, baking powder, baking soda, and salt in a bowl.

3. Mix pumpkin puree, oil, vegetable milk, apple cider vinegar, vanilla extract, sugar in a separate bowl.

4. now add the liquid ingredients into the dry ingredients and stir it in, it should form a thick batter.

5. the dough can now be placed in the prepared pan and sprinkled with the toppings.

6. Bake the bread in the oven for 50-60 minutes. After this time, remove the bread and let it cool in the pan for about 15 minutes. Then remove the bread and let it cool on a rack for at least 1 more hour.
