Bean salad with lime dressing

Ingredients
For 2 persons

1 large tomato

1 avocado

60 g corn

250 g precooked black beans

250 g precooked white beans

1 jalapeno

1 pepper

1 handful of coriander

1 red onion

Dressing:

60 ml olive oil

1 tsp brown sugar

1/2 tsp salt

1/2 tsp black pepper

2 tbsp balsamic vinegar

2 tbsp lime juice

1 clove of garlic


Preparation

1. Cut tomato, avocado, peppers as well as onion into small cubes and place in a large bowl.

2. Chop the jalapeno and coriander and add to the bowl along with the corn, black beans and white beans.

3. Mix all the ingredients for the dressing, pour over the salad and enjoy!
