100 g Whole-grain pasta (gross weight)
1 pinch of iodized salt for pasta water
3 Tbsp. salad cream (26% fat)
3 Tbsp. lemon juice
1 pinch of iodized salt
1 pinch of freshly ground pepper
90 ml vegetable broth
2 large bunches of radishes
6 gherkins
3 slices of smoked turkey breast
3 tangerines
1 bunch of fresh herbs
40 g cashews
Cook pasta according to package instructions in salted water until al dente and allow to cool. Mix together salad cream, lemon juice, salt, pepper, and vegetable broth.
Chop gherkins and radishes into small pieces and add to sauce. Cut turkey breast and peeled tangerines into small pieces, chop herbs. Pour all ingredients together with the pasta into the salad dressing and allow to stand. Sprinkle with cashews.
Tip: Cashew nuts are especially aromatic when they are briefly toasted in a dry pan. If radishes are not available, substitute with blanched broccoli or fresh carrots. In late summer, fresh picked apples instead of tangerines are recommended.
The turkey breast can be replaced with chicken breast or cooked ham.
