Broccoli Salad

Ingredients
For 2 persons

500 g broccoli (fresh or frozen)

2 pinches of iodized salt

25 g pine nuts

3 Tbsp. olive oil

1 tsp. curry powder

2 Tbsp. lemon juice

1 finely chopped spring onion

150 g smoked turkey breast

2 whole-grain bread rolls


Preparation

Blanch broccoli in salted boiling water and drain. Roast pine nuts briefly in a frying pan (without oil), remove, and add olive oil to the pan. Add curry powder and briefly sauté. Place in a bowl and mix together with lemon juice, pine nuts, and chopped spring onion. Add broccoli and allow to stand briefly. Cut turkey breast into strips and combine.


Serve with: crusty whole-grain baguette or bread rolls.
