Ingredients
For 2 persons

1/2 red onion

1 clove of garlic

1 small piece ginger

1/2 tbsp. coconut oil

1/2 L vegetable broth

100 g tofu

1 pak choi

2 spring onions

100 g ramen noodles

1 tbsp. soy sauce

1 tbsp. miso paste

50 ml vegetable milk


Preparation

1. Sauté the onion, garlic and ginger in a large pot, then add the vegetable broth and simmer for a while.

2. Cut the tofu into cubes and chop the spring onions and pak choi.

3. prepare noodles according to instructions.

4. fry tofu in a pan until crispy and deglaze with soy sauce.

5. add miso paste and vegetable milk to broth and continue to simmer.

Divide the noodles, pak choi, spring onions and tofu into bowls. Pour in the broth and enjoy.
