2 eggs
150 ml whole milk
80 g Whole-grain flour
20 g rolled oats
25 g sliced cheese
½ bunch of chives
1 bunch of dill
¼ bunch parsley leaves
1 pinch sea salt
1 pinch black pepper
125 g quark (alternatively cottage cheese)
50 g sweet pepper
2 bananas on the side
Pancakes: Stir together eggs and 2/3 of the milk with whole-grain flour. Add rolled oats and the grated cheese and season with sea salt and black pepper. Finely chop chives, dill and parsley (set aside half of each for the quark) and add to the dough. Bake two pancakes in hot oil. If the dough is too thick, add more milk and stir until smooth.
Stir in quark to the remaining milk and season with chopped herbs, sea salt, and black pepper. Serve quark with the pancakes. Garnish with pepper strips.
