110 g boneless chicken breast
1 orange
1 Tbsp. canola oil
1/2 tsp. apricot jam
1 pinch of paprika powder (sweet)
1 pinch of curry powder
1 pinch of salt
1 pinch of pepper
1/2 red bell pepper (approx. 100 g)
1-2 firm apricots (approx. 50 g)
Approx. 50 ml water
70 g couscous
1/2 bunch of Italian parsley
2 skewers
300 g seasonal fruit
1. Rinse chicken fillet, pat dry with a kitchen towel, and cut into approximately 2 cm pieces.
2. Cut orange in half and squeeze out juice. For the marinade, set aside 3 tablespoons orange juice and stir together in a bowl with half the canola oil and jam. Season with paprika and curry powder, salt and pepper. Gently stir chicken pieces in the mixture and marinate covered in the fridge.
3. Wash pepper half, cut into quarters, and remove seeds. Cut 1/4 into 2 cm squares, finely dice the second quarter and set aside. Wash apricots, halve, remove pit, and cut into wedges.
4. Dilute the remaining orange juice with 50 ml of water and bring to the boil in a small saucepan. Stir in couscous with 1 pinch of salt and 1 pinch of curry, stir, remove from heat and allow to absorb liquid for approximately 15 minutes.
5. Meanwhile, wash parsley, separate leaves, and chop.
6. Remove chicken fillet from the marinade, drain slightly, and thread alternately with the slices of pepper and apricot wedges onto 4 skewers.
7. Heat the remaining oil in a shallow pan. Fry skewers over medium heat, turning frequently, until the meat is golden brown (approx. 8-10 minutes). Add marinade and bring to boil.
8. Stir parsley and finely diced bell pepper into couscous. Season with salt and pepper and serve with the skewers.
Tip: outside the apricot season substitute with dried apricot.
For dessert, prepare a plate of seasonal fruit.
