200 g Couscous

2 red bell peppers
3 spring onions
½ bunch coriander
½ bunch parsley
1 organic lemon
1 tablespoon maple syrup
6 tablespoons olive oil
1. mix couscous with 1⁄4 tsp salt, pour over 1⁄4 l boiling water and let swell covered for about 5 minutes.
2. clean peppers, wash and cut into strips. Clean spring onions, wash and cut into fine rings. Wash and dry the herbs, peel off the leaves and chop coarsely. Loosen couscous with a fork, then mix in prepared ingredients.
3. Wash the lemon in hot water, dry it and peel off some peel in thin strips. Squeeze the lemon. Mix juice, salt, pepper and maple syrup, whisk in oil. Mix the lemon mixture with the salad and sprinkle with lemon zest.
